- 3 lemons
- 3 large eggs
- 1 1/2 c. whole milk
- 2/3 c. flour
- 1/2 tsp. salt
- 3 Tbsp. butter, melted
- 3/4 c. sugar
- candied lemon peel (optional)
Directions

1From lemons grate 1/2 teaspoon peel and squeeze 3/4 cup juice.

2Cover and refrigerate.

3In blender at medium speed, mix eggs, milk, flour, salt, lemon peel and 2 tablespoons melted butter until smooth.

4Transfer to medium bowl; cover and refrigerate at least 1 hour or overnight.

5Whisk batter before using.
