Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. butter
  • 1 c. sugar
  • 4 eggs, separated
  • 1/2 c. lemon juice
  • 1/4 c. chopped nuts
  • 2 Tbsp. brown sugar (light)
  • 1/4 tsp. ground nutmeg

Directions

    Mix first 3 ingredients.

    Beat butter and sugar together, add egg yolks.

    Stir in lemon.

    Mix dry with wet ingredients.

    Beat egg whites.

    Fold in slowly.

    Mix brown sugar, nuts and nutmeg. Sprinkle on top of muffins.

    Bake at 375° for 7 to 10 minutes for mini, 15 to 20 minutes for regular.
