  • 1-3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg, room temperature
  • 1 cup buttermilk
  • 1/4 cup canola oil
  • 2 tablespoons minced fresh thyme or 2 teaspoons dried thyme
  • 1 tablespoon lemon juice
  • 2 teaspoons grated lemon zest
  • 1/4 cup pine nuts, optional
  • 1/2 cup confectioners' sugar
  • 1 tablespoon lemon juice

Directions

    In a large bowl, combine the flour, sugar, baking soda and salt. In a small bowl, whisk the egg, buttermilk, oil, thyme, lemon juice and lemon zest. Stir into dry ingredients just until moistened.

    Transfer to a greased 8x4-in. loaf pan. Sprinkle with pine nuts if desired. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

    In a small bowl, whisk confectioners' sugar and lemon juice; drizzle over warm bread.
