- 1 lb. veal scallopini, pounded
- 1/2 lemon, sliced
- parsley
- 1 c. fresh mushrooms, sliced
- 1/4 c. lemon juice
- flour
- 1/4 c. butter
- 2 Tbsp. oil
Directions

1Dip veal in flour; pan-fry in melted butter and oil for 1 minute per side.

2Remove to tray.

3Put mushrooms in pan and stir until soft, not browned; add lemon juice to pan and stir for 2 to 3 minutes.

4Pour over veal; top with lemon slices and parsley. Serves 4.
