Lemony Catfish In Foil

Ingredients
- 1 lb. catfish fillets
- 4 tsp. margarine
- 1/3 c. lemon juice
- 1/4 to 1/2 tsp. pepper
- 1/2 c. carrots, diced
- 1/4 c. celery, diced
- 1/4 c. green onion, chopped
- 2 Tbsp. parsley, snipped or 2 tsp. dried parsley
- 2 lemons, thinly sliced
Directions

1Place catfish on piece of foil about 4 inches longer than fish.

2Melt margarine and add the lemon juice, pepper, carrots, celery, onion and parsley.

3Pour mixture over fish dividing evenly.

4Top fish with lemon slices.

5Bring edges of foil together and fold over several times.

6Twist on the end to form a tail. Tuck other end under to form a point.

7Place on cookie sheet. Bake at 350° for 30 minutes or until fish flakes easily.

8Yields 4 servings with 170 calories and 7 grams of fat.
