- 1 tbs olive oil
- 2 tbs lemon juice
- salt and pepper
- 1 large clove of garlic, minced
- 2 tbs. Parmesan cheese
Directions

1In a small saucepan, combine water and quinoa with a pinch of salt and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until all liquid is absorbed. Let stand for 5 minutes. Squeeze in lemon juice, drizzle olive oil, and mix in garlic and cheese.
