- 1 c. orzo pasta
- 3 tbsp. olive oil
- 1 clove garlic
- 1 1/2 tsp. lemon zest
- 2 tbsp. lemon juice
- 3 tbsp. minced parsley
- 1/4 c. grated Parmesan cheese
- 1/4 c. slivered, pitted kalamata olives
- 1/4 c. Sliced scallions
- Freshly ground black pepper
Directions

1Boil orzo pasta until al dente; drain.

2In a nonstick skillet, heat olive oil and garlic over low heat until garlic is lightly golden, about 2 minutes.

3Raise heat to medium and stir in orzo, lemon zest, lemon juice, and parsley.

4Cook, stirring, until pasta is hot.

5Remove from heat; stir in Parmesan cheese, kalamata olives, and scallions.

6Add freshly ground black pepper to taste.
