- 1 c. lentils, soaked overnight
- 1/2 c. diced celery
- 1/2 c. diced bell pepper
- 1 c. chopped mushrooms
Directions

1Saute onion, celery and bell pepper over low heat.

2Add lentils and mushrooms.

3Simmer, covered, stirring frequently, until lentils are fully tender.

4Serve with rice (try brown rice) or as a side dish.
