Lentil Rice Fruit Salad

Ingredients

  • 4 cups cooked brown rice
  • 1 1/2 cups cooked lentils
  • 1 apple, diced
  • 1 cup grapes, halved
  • 1 red pepper, chopped
  • 1 stalk celery, chopped
  • 1/2 cup olive oil
  • 1/3 cup balsamic vinegar
  • 4 teaspoons Dijon mustard
  • 4 garlic cloves
  • 2 teaspoons tarragon
  • 1/2 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

    Mix rice through celery in a large bowl.

    In a small bowl, whisk together remaining ingredients until well blended.

    Add to large bowl and stir until well mixed.

    This will taste good now, but after a day or so in the fridge it will be fantastic!
