- 4 cups cooked brown rice
- 1 1/2 cups cooked lentils
- 1 apple, diced
- 1 cup grapes, halved
- 1 red pepper, chopped
- 1 stalk celery, chopped
- 1/2 cup olive oil
- 1/3 cup balsamic vinegar
- 4 teaspoons Dijon mustard
- 4 garlic cloves
- 2 teaspoons tarragon
- 1/2 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions

1Mix rice through celery in a large bowl.

2In a small bowl, whisk together remaining ingredients until well blended.

3Add to large bowl and stir until well mixed.

4This will taste good now, but after a day or so in the fridge it will be fantastic!
