- 1 c. finely chopped onions (or more, if desired)
- 3 Tbsp. prepared mustard
- juice of 1 or 1 1/2 lemons
- tarragon vinegar (to achieve desired acidity)
- sugar
- chives
- oil
Directions

1Check lentils and remove any little stones.

2In a 4-quart saucepan, wash lentils several times in 2 quarts of cold water to skim off debris.

3Use same saucepan to soak lentils overnight in 2 quarts of cold water.
