  • 1 ( 16 oz.) pkg. lentils
  • 1 c. finely chopped onions (or more, if desired)
  • 3 Tbsp. prepared mustard
  • juice of 1 or 1 1/2 lemons
  • tarragon vinegar (to achieve desired acidity)
  • sugar
  • chives
  • oil

Directions

    Check lentils and remove any little stones.

    In a 4-quart saucepan, wash lentils several times in 2 quarts of cold water to skim off debris.
  3. 3
    Use same saucepan to soak lentils overnight in 2 quarts of cold water.
