- 1 lb. lentils
- 1 large onion
- 1 c. celery
- 1 can tomatoes
- 1 tsp. salt
- 3 or 4 medium size potatoes
- 2 lb. pork sausage
Directions

1In large pot, cover lentils with water and bring to a boil. Pour off water, then add about 8 cups water.

2Add onion, celery, salt, potatoes and tomatoes.

3Simmer 1 1/2 to 2 hours.

4Brown pork sausage in skillet.

5Pour drippings into soup.

6Cover and cook slowly until well done, several hours.

7Add pork sausage to soup before serving.
