- 1 cup dry lentils, rinsed
- 6 cups chicken broth
- 2 cups chopped onion
- 1 clove garlic, minced
- 1 tbsp. cooking oil
- 2-1/2 cup chopped fresh tomatoes
- 1 cup sliced carrots
- 1/2 tsp. dried thyme
- 1/4 tsp. dried marjoram
Directions

1In a large saucepan, brin lentils and chicken broth to a boil.

2Reduce heat.

3Simmer for 30 minutes.

4Meanwhile, in a skillet, saute onion and garlic in oil.

5Add to saucepan.

6Add tomatoes, carrots, thyme and marjoram.

7Cook for 30 minutes longer or until lentils and vegetables are tender.
