Lentil Soup

Ingredients

  • 1/4 c. oil
  • 2 large onions, chopped
  • 1 carrot, sliced
  • 1/2 tsp. thyme
  • 1/2 tsp. marjoram
  • 6 c. chicken stock or bouillon
  • 1 tsp. dry lentils, washed
  • 1/4 c. parsley, chopped
  • 1 lb. can tomatoes
  • 1/4 c. sherry
  • Mozzarella or Swiss cheese

Directions

    Cook onions and carrot 3 to 5 minutes in oil.

    Add thyme and marjoram and saute 1 minute more.

    Add stock, lentils, tomatoes, parsley and salt.

    Cook in covered pot 1 1/4 hours.

    Add sherry and heat.

    Put grated cheese in bottom of bowl and pour hot soup over.
