Lentil Spinach Soup

- 1 lb. pkg. lentils
- 1 pkg. frozen spinach
- 1 small chopped onion
- 1 stalk celery, chopped
- 1 carrot, chopped
- 1 (16 oz.) can stewed tomatoes
- 8 c. water
- 1 bouillon cube
- 2 Tbsp. vinegar
- freshly ground pepper
Directions

1Combine all ingredients in a large soup pot or crock-pot. Cook on low for 6 hours.

2If using a crock-pot, set crock-pot to high and cook 6 hours.

3Add ground pepper to taste.

4Can also add two chopped Italian sausages to ingredients for different flavor before cooking.
