Lentil Spinach Soup

  • 1 lb. pkg. lentils
  • 1 pkg. frozen spinach
  • 1 small chopped onion
  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 1 (16 oz.) can stewed tomatoes
  • 8 c. water
  • 1 bouillon cube
  • 2 Tbsp. vinegar
  • freshly ground pepper

Directions

    Combine all ingredients in a large soup pot or crock-pot. Cook on low for 6 hours.

    If using a crock-pot, set crock-pot to high and cook 6 hours.

    Add ground pepper to taste.

    Can also add two chopped Italian sausages to ingredients for different flavor before cooking.
