- 4 Tbsp. olive oil
- 1 medium onion, chopped
- 1 large shallot, chopped
- 1/2 c. dried currants
- 3 medium yams or sweet potatoes, peeled and cut into chunks
- 1 bay leaf
- 1 1/2 c. red lentils, washed
- 2 (13 1/2 oz.) cans College Inn chicken broth
- salt and pepper to taste
Directions

1Preheat olive oil.

2Add onion, shallot and currants. Cook until onions appear glassy.

3Add yams, bay leaf, lentils and chicken broth.

4Simmer for 35 to 45 minutes.

5Add salt and pepper to taste. May be made a day ahead and reheated.

6Serves 8.
