  • 12 lb red lentil, washed and picked over
  • 1 quart water
  • 12 cup olive oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 12 teaspoon fennel seed, crushed
  • salt (optional)

Directions

    Place lentils and water in a large pot.

    Bring to a boil and boil for 5 minutes.

    Remove from heat and set aside to soak for 1 hour.

    Return pot to heat.

    Add oil, onion, garlic and fennel.

    Simmer gently for 35 minutes, or until lentils are tender.

    Season with salt if desired.
