- 12 lb red lentil, washed and picked over
- 1 quart water
- 12 cup olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 12 teaspoon fennel seed, crushed
- salt (optional)
Directions

1Place lentils and water in a large pot.

2Bring to a boil and boil for 5 minutes.

3Remove from heat and set aside to soak for 1 hour.

4Return pot to heat.

5Add oil, onion, garlic and fennel.

6Simmer gently for 35 minutes, or until lentils are tender.

7Season with salt if desired.
