  • vegetarian refried beans 1 can
  • grated zucchini 2 cups
  • 1 cup mozzarella or vegan style mozzarella
  • 1/4 cup salsa or to taste
  • Roll burritos, place in baking dish and cover with enchilada sauce

    Cover and bake at 350 for 25 minutes. Remove foil and sprinkle with 1/2 cup grated mozzarella and bake for 5 minutes.
