"Light" Beef Stroganoff

- 3/4 lb. beef round steak, trimmed
- 1/4 lb. fresh mushrooms
- 1/2 c. sliced onions
- 1/2 c. condensed beef broth
- 1/2 c. water
- 1 Tbsp. ketchup
- 1/8 tsp. pepper
- 2 Tbsp. flour
- 1 c. buttermilk
- 2 c. cooked noodles
Directions

1Slice steak across grain into thick strips about 1/8-inch wide and 3-inches long.

2Wash and slice mushrooms; cook beef strips, mushrooms and onion in nonstick frying pan until beef is lightly browned.

3Add broth, water, ketchup and pepper.

4Cook and simmer until beef is tender about 45 minutes.

5Mix flour with about 1/4 cup buttermilk until smooth.

6Add remaining buttermilk.

7Stir into beef mixture.

8Cook stirring constantly until thickened.

9Serve over noodles.
