- 2 eggs
- 1 cup shredded unsweetened coconut
- 1 teaspoon vanilla
- 1/2 cup shredded unsweetened coconut
Directions

1Preheat oven to 375°F Mix first five ingredients together, and drop by spponfuls onto a greased cookie sheet.

2Sprinkle remaining 1/2 cup of coconut over cookies.

3Bake for 15 minutes or until beginning to brown slightly. Let cool completely before removing from cookie sheet.
