- 1 c. yellow cornmeal
- 1 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. sugar
- 1/4 c. egg substitute or 2 egg whites
- 1 1/4 c. plain nonfat yogurt
- 1/4 c. vegetable oil
Directions

1Combine cornmeal, flour, baking powder, soda, salt and sugar in a large bowl; make a well in center of mixture.

2Combine egg substitute, yogurt and oil; add to dry ingredients, stirring just until moistened.

3Spoon mixture into muffin pans coated with vegetable cooking spray, filling three-fourths full.

4Bake at 425° for 12 to 14 minutes or until golden brown.

5Remove muffins from pans immediately.

6Yields 1 1/2 dozen (96 calories per muffin).
