Light Fruit Cake

  • 1 doz. eggs
  • 2 c. plain flour
  • 2 c. sugar
  • 1 oz. almond flavoring
  • 1 lb. red candied cherries, chopped up
  • 1 lb. green candied cherries, chopped up
  • 1 1/2 lb. candied pineapple, chopped up
  • 3 qt. pecans, chopped up
  • 1 box white raisins
  • 1 1/2 c. plain flour, mixed with fruit to coat

Directions

    Mix eggs and sugar, beating well.

    Add flour and almond flavoring, mixing well.

    Add cut up fruit and nuts; mix well. Makes 2 cakes in tube pans.

    Cook at 275° for 2 1/2 hours.

    Put water in cookie sheet on rack under cakes to keep from being so dry.

    Put brown paper in bottom of pans.
