- 1 cup flour
- 1/4 cup powdered sugar
- 3 ounces low-fat cream cheese
- 1 tablespoon vegetable oil
- 2 large eggs
- 1/2 cup sugar
- 1 1/2 tablespoons grated fresh lemon zest
- 2 tablespoons flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup fresh lemon juice
Directions

1Preheat oven to 350°.

2In large bowl, stir together flour and powdered sugar.

3Using a pasty cutter, cut in cream cheese and oil until crumbly.

4Press mixture into bottom of an 8-inch square baking pan.

5Bake 20 minutes or until light golden in color.

6In a mixing bowl, beat eggs with sugar and lemon peel until smooth.

7Whisk in flour, baking powder, salt, and finally lemon juice.

8Pour into the hot crust and bake 20 minutes, or until the top is golden brown and set.
