Light Nicoise Salad

Ingredients

  • 4 None new potatoes, thinly sliced
  • 1/2 None iceberg lettuce, quartered, leaves washed
  • 1 pkg (6-7 oz) tuna in spring water, drained
  • 9 oz cherry tomatoes, halved
  • 4 oz green beans, trimmed and blanched
  • 2 None hard-boiled eggs, halved
  • None None FOR THE DRESSING
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 2 tsp extra-virgin olive oil
  • 1 tsp mustard
  • 1 clove garlic, crushed

Directions

    Preheat the broiler on high. Line a baking pan with foil. Arrange potato slices in a single layer on pan. Spray lightly with no stick cooking spray and season to taste.

    Broil for 6-8 mins, until golden. Turn slices over and broil for a further 6 mins, until cooked through. Set aside until required.

    For the dressing, whisk all ingredients in a small bowl. Season to taste.

    On serving platter, arrange lettuce, potato slices, tuna, tomatoes, beans and egg. Drizzle dressing over salad.
