Light Whole Wheat Bread

- 3 9/16 cups water
- 9 3/8 cups white flour
- 1 5/8 cups wheat flour
- 1 1/2 tablespoons salt
- 1 1/2 tablespoons yeast
Directions

1Mix all ingredients in a large bowl- dough will be very wet and sticky

2Let rise on the counter for two hours, then put in the refrigerator for 8 hours, or over night

3Take a chunk of dough and place it in to a pan, or free form loaf. Let rest for 30-45 minutes.

4Dust the top with flour and score the loaf appropriately

5Bake at 450 degrees for 35-50 minutes, depending on the size of the loaf. Top of the loaf should be very browned, almost burned.
