  • 4 slices hickory smoked bacon
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 teaspoon dried thyme
  • 1 tablespoon finely chopped parsley
  • 2 (14 3/4 ounce) cans creamed corn
  • 1 (13 ounce) can corn, nibblets
  • oz.can diced potato
  • 2 (12 ounce) cans evaporated milk

    render fat from bacon.

    add diced onion saute` till clear, add thyme,parsley and garlic saute 1or 2 minute drain nibblets and add together with creamed corn, caned milk, diced potato,bring to simmer stirring frequently.

    reduce heat to low simmer 15 min continue to stir occasionally.

    serve w/ common crackers(they look like giant oyster crackers) or oyster crackers.
