Lima Bean Soup

Ingredients
- 1 pkg. dried lima beans
- salt and pepper
- coriander seed
- fresh sage
- 1 bay leaf
- 1 hot pepper
- 2 medium potatoes
- 1/2 c. sherry (optional)
- 1/4 c. olive oil
- 1 large onion
- Polish sausage (optional)
- 6 to 8 cloves garlic, crushed
Directions

1Soak dried beans overnight.

2Wash thoroughly and put in pot of boiling water.

3Add chopped onion and cubed potatoes.

4Add seasonings to taste.

5Bring to a boil, then cook on low until beans are done and soup is thick.

6Mash beans with wooden spoon while in the pot.

7Remove hot pepper.

8Add olive oil and sherry and simmer another 15 minutes.

9If sausage is added, omit olive oil and add sausage along with potatoes and onion, but boil sausage separately first to remove fat.
