Lima Bean Soup

- 1/4 lb. bacon (in small pieces)
- 1 small onion, chopped
- 1 c. lima beans
- 1 (28 oz.) can whole tomatoes
- 2 or 3 bay leaves
- salt and pepper to taste
Directions

1Soak the lima beans in water overnight to soften or boil on stove top until soft.

2In a large saucepan, brown the bacon together with the onion.

3Drain excess grease.

4Add lima beans, tomatoes, bay leaves, salt and pepper.

5Simmer until beans are tender, 1 1/2 to 2 hours.

6Top each bowl with Parmesan cheese to serve.
