Lima Bean-Tomato Casserole

- 5 Tbsp. butter
- 1 Tbsp. flour
- 1/8 tsp. pepper
- 1 (1 lb.) can lima beans, drained
- 16 (1 1/2-inch) bread rounds or 1 1/2 c. soft crumbs
- 1/3 c. chopped onion
- 1 tsp. salt
- 1 (1 lb.) can tomatoes
- 2 c. diced, cooked ham
Directions

1Melt 3 tablespoons butter; add onion and cook about 5 minutes. Blend in flour, salt and pepper.

2Add tomatoes and mix thoroughly.

3Cook, stirring constantly, until thickened.

4Add beans and ham; heat until bubbling.

5Turn into 1 1/2-quart casserole.

6Spread bread rounds with remaining butter (or melt butter and toss with crumbs).

7Place rounds or crumbs in a border around casserole.

8Broil about 10 minutes or until bread is delicately browned.

9Or heat in 425° oven.
