Lima Bean-Tomato Casserole

  • 5 Tbsp. butter
  • 1 Tbsp. flour
  • 1/8 tsp. pepper
  • 1 (1 lb.) can lima beans, drained
  • 16 (1 1/2-inch) bread rounds or 1 1/2 c. soft crumbs
  • 1/3 c. chopped onion
  • 1 tsp. salt
  • 1 (1 lb.) can tomatoes
  • 2 c. diced, cooked ham

Directions

    Melt 3 tablespoons butter; add onion and cook about 5 minutes. Blend in flour, salt and pepper.

    Add tomatoes and mix thoroughly.

    Cook, stirring constantly, until thickened.

    Add beans and ham; heat until bubbling.

    Turn into 1 1/2-quart casserole.

    Spread bread rounds with remaining butter (or melt butter and toss with crumbs).

    Place rounds or crumbs in a border around casserole.

    Broil about 10 minutes or until bread is delicately browned.
