Ingredients
- 4 egg whites
- 2/3 cup sugar
- 3 tbsp gin
- 1 1/2 tsp lime peel, grated
- 1/4 tsp salt
- 1/4 tsp almond extract
- 14 oz flaked coconut
- 1/2 cup all-purpose flour
- 8 oz white baking chocolate
Directions

1Preheat oven to 350.

2In a small bowl, whisk first 6 ingredients together.

3In a large bowl, toss coconut and flour together.

4Add egg white mixture to coconut mixture.

5Drop by tablespoons 2 inches apart onto greased baking sheets.

6Bake 15-18 minutes until tops begin to brown.

7Remove from pans to cooling racks and cool completely.

8Melt chocolate while cooling.

9Dip bottoms of cookies into melted chocolate and allow excess to drip off.

10Place on wax paper and let stand until set.
