- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 1/2 teaspoons ground ginger
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs, at room temperature
- 2/3 cup buttermilk
- 1/2 cup unsalted butter, softened
- 1 tablespoon finely grated lime zest
- 1 teaspoon vanilla extract
- Lime Icing
- 2 1/4 cups powdered sugar
- 3 tablespoons unsalted butter, melted and cooled slightly
- 3 tablespoons freshly squeezed lime juice
- 1 teaspoon finely grated lime zest
Directions

1Preheat oven to 350 degrees.

2Spray a 9-inch square metal baking pan with nonstick baking spray with flour.

3In a large bowl, whisk together the flour, sugar, ginger, baking powder and salt.

4Add eggs, buttermilk, butter, lime zest and vanilla to flour mixture.

5Using an electric mixer on med-low speed, beat for 1 minute, until blended.

6Scrape sides and bottom of bowl with a spatula.

7Beat on medium speed for 1 minute.

8Spread batter even into prepared pan.

9Bake for 40-45 minutes or until a pick inserted in the center comes out with a few moist crumbs attached.

10Let cool in pan on a wire rack for 10 minutes, then invert cake onto rack to cool completely.

11Meanwhile, make icing: in a small bowl, whisk together powdered sugar, butter, lime juice and lime zest until blended and smooth; use immediately.

12Spread icing over top of cooled cake.
