- 3/4 cup unsalted butter, at room temperature + 1 tbsp, melted
- 1 1/4 cup granulated sugar
- 3 None eggs, lightly beaten
- 2 None limes, 1/2 zested, 2 juiced
- 1 1/3 cups self-rising flour, sifted
- 3 None passionfruit, pulp removed
Directions

1Preheat oven to 375°F. Brush a 7 x 11 inch rimmed baking pan with melted butter, line with parchment paper and brush with butter again. Cream butter and sugar then add eggs, 1 at a time, beating well after each addition. Add lemon zest then fold in flour and 2 tbsp water. Transfer to prepared pan and smooth top. Bake for 20-25 mins, until golden and a skewer comes out clean. Leave in pan to cool slightly.

2Meanwhile, to make syrup, combine 1/4 cup sugar and lime juice in a small saucepan. Stir over low heat until sugar has dissolved. Bring to a boil, stirring. Boil, without stirring, until light golden and syrupy. Remove from heat and cool slightly. Add passionfruit pulp then spoon over top of cake while still warm. Let cake cool then serve.
