  • 1-3/4 cup All-purpose Flour
  • 1 cup Sugar, Divided
  • 1/2 Tablespoons Lime Zest
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/4 teaspoons Salt
  • 1 whole Egg
  • 1 cup Sour Cream
  • 6 Tablespoons Butter, Melted
  • 1 Tablespoon Fresh Lime Juice

Directions

    Preheat oven 400 degrees. In a large bowl, stir together flour, 3/4 cup of the sugar, lime zest, baking powder, baking soda and salt. In a small bowl, add melted butter, sour cream, egg, and lime juice and stir together until well combined. Stir wet ingredients into dry until just mixed. Fill a greased muffin tin half full and sprinkle each one with about 1/2 teaspoon of remaining sugar. Bake for 15 - 20 minutes. Remove from the pan and cool slightly.
