Lime Pickles

  • 9 lb. pickles, sliced
  • 2 gal. water
  • 2 c. agriculture hydrated lime
  • 2 qt. white vinegar
  • 4 1/2 lb. granulated sugar
  • 1 Tbsp. salt
  • 1 tsp. celery seed (rounded)
  • 1 tsp. pickling spice (rounded)

Directions

    Mix pickles, water and lime.

    Stir a couple of times and soak 24 hours.
  3. 3
    After soaking, rinse pickles 3 times.

    Add to pickles the vinegar, sugar, salt, celery seed and pickling spice.

    Let set overnight.

    Then cook 35 minutes and jar, open kettle method. Makes about 6 quarts.
