Lime Pickles

  • 15 lb. pickles
  • 2 c. lime
  • 2 gal. water
  • 5 pt. vinegar
  • 6 lb. sugar
  • 2 tsp. whole cloves
  • 2 tsp. whole allspice
  • 2 tsp. mixed spices
  • 4 Tbsp. salt
  • green food coloring

    Wash and slice pickles in large container.

    (Do not use aluminum.)

    Mix 2 cups lime in 2 gallons water.

    Pour over pickles.

    Let set 24 hours.

    Rinse in 4 different changes of water.
  7. 7
    Cover with cold water and let soak 3 to 4 hours.

    Drain.
