Lime-Zested Grilled Chicken

  • 12 cup fresh lime juice
  • 2 teaspoons freshly grated lime peel
  • 3 garlic cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 4 (5 -6 ounce) chicken breasts
  • 1 lime, thinly sliced

Directions

    Combine lime juice, lime peel, garlic, oregano, thyme and pepper to taste.

    Pour over chicken breasts in a large bowl, turning the chicken to coat.

    Refrigerate for at least 4 hours, turning every so often.

    Preheat grill to medium (300 degrees -350 degrees ).

    Remove chicken from marinade.

    If you wish to use the marinade as a sauce, boil it in a saucepan first.

    Place chicken on grill, on direct heat until grill marks appear, about 10-12 minutes each side.

    Remove and let stand for at least 5 minutes.

    Serve with lime slices.
