- 4 ripe tomatoes, seeded and diced
- 14 cup vegetable oil
- 14 cup thinly sliced green onion
- 2 tablespoons lemon juice
- 1 garlic clove, crushed and chopped
- 1 teaspoon dried basil leaves, crushed
- 12 teaspoon dried oregano leaves, crushed
- 12 teaspoon dried rosemary leaves, crushed
- salt and pepper
- handful linguine
- 2 cups cottage cheese
- 13 cup finely chopped parsley
- cucumber, slices
Directions

1Combine tomatoes, oil, onions, lemon juice, garlic, basil, oregano, and rosemary in a small bowl.

2Add salt and pepper to taste.

3Cover and chill 1 hour to blend flavors.

4Cook linguine according to package directions; drain.

5Rinse in cold water; drain.

6Combine cottage cheese and parsley.

7To serve, divide pasta among 4 chilled salad plates; top with cottage cheese mixture, then tomato mixture.
