  • 4 ripe tomatoes, seeded and diced
  • 14 cup vegetable oil
  • 14 cup thinly sliced green onion
  • 2 tablespoons lemon juice
  • 1 garlic clove, crushed and chopped
  • 1 teaspoon dried basil leaves, crushed
  • 12 teaspoon dried oregano leaves, crushed
  • 12 teaspoon dried rosemary leaves, crushed
  • salt and pepper
  • handful linguine
  • 2 cups cottage cheese
  • 13 cup finely chopped parsley
  • cucumber, slices

Directions

    Combine tomatoes, oil, onions, lemon juice, garlic, basil, oregano, and rosemary in a small bowl.

    Add salt and pepper to taste.

    Cover and chill 1 hour to blend flavors.

    Cook linguine according to package directions; drain.

    Rinse in cold water; drain.
