Linguine With Cauliflower

- 1 head cauliflower, cut in pieces
- 1 onion, chopped
- 1 small can flat anchovies
- salt and pepper
- 1 small bag saffron (for color)
- 1 lb. linguine, cooked al dente
- 1/4 c. raisins
- 1/4 c. pignoli nuts (optional)
- 2 Tbsp. olive oil
- Romano cheese
Directions

1Parboil cauliflower; drain and set aside.

2Do not discard water.

3In separate pan, saute onion.

4Add anchovies.

5Cook until anchovies melt.

6Add raisins, nuts, cooked cauliflower, saffron and just enough water to cover vegetables.

7Cook for 10 to 15 minutes (use water that cauliflower was cooked in).

8Mix cauliflower with linguine.

9Add Romano cheese.
