Linguine With Cauliflower

Ingredients

  • 1 head cauliflower, cut in pieces
  • 1 onion, chopped
  • 1 small can flat anchovies
  • salt and pepper
  • 1 small bag saffron (for color)
  • 1 lb. linguine, cooked al dente
  • 1/4 c. raisins
  • 1/4 c. pignoli nuts (optional)
  • 2 Tbsp. olive oil
  • Romano cheese

Directions

    Parboil cauliflower; drain and set aside.

    Do not discard water.

    In separate pan, saute onion.

    Add anchovies.

    Cook until anchovies melt.

    Add raisins, nuts, cooked cauliflower, saffron and just enough water to cover vegetables.

    Cook for 10 to 15 minutes (use water that cauliflower was cooked in).

    Mix cauliflower with linguine.

    Add Romano cheese.
