  • 1 1/2 c. sugar
  • 2 Tbsp. cornstarch
  • 1/2 tsp. grated lemon peel
  • 1 c. fresh lemon juice (about 5 medium lemons)
  • 3/4 c. water
  • 2 drops yellow food coloring (if desired)

Directions

    In medium size heavy saucepan, combine sugar and cornstarch. Mix well. Stir in remaining ingredients until combined.

    Cook over high heat, stirring frequently, until mixture comes to a boil. Boil 1 minute, stirring constantly, until thickened.

    Refrigerate until completely chilled before serving. Makes 2 cups.
