- 2 lb. veal liver
- 1 onion
- 1/2 c. water
- salt and pepper to taste
- 1/2 c. flour
Directions

1Cut liver into 3-inch squares.

2Season with salt and pepper. Roll in flour and pan-fry in shortening.

3Fry until golden brown on both sides.

4Turn only 1 time.

5Remove liver from skillet and fry onion in drippings, stirring constantly.

6Return liver to skillet and add water.

7Cover with tight fitting lid and cook for approximately 5 minutes.

8Liver will become tough if cooked too long.

9Serves 5.
