Liver Dumpling Soup

Ingredients
- 2 lb. beef liver, ground
- 1 small loaf stale bread or croutons
- 2 eggs
- salt
- pepper
- nutmeg
- very little sage
- 1 tsp. minced parsley
- flour
- 3 qt. rich beef stock (broth from where meat was cooked)
Directions

1Soak bread in milk and squeeze dry.

2Crumble into ground liver.

3Add other ingredients.

4Add enough flour to make a stiff batter.

5Drop dumplings in boiling beef broth.

6Cook slow for 20 to 30 minutes, then serve as soup.

7You can also add carrots while you are cooking the broth.
