Ingredients

  • 2 (4 1/2 oz.) cans liver spread
  • 1/2 c. chopped gherkins
  • 2 tsp. spicy mustard
  • 7 Tbsp. soft margarine
  • 1 loaf unsliced bread
  • 2 gherkins, sliced to make 9 long strips
  • 4 Tbsp. margarine
  • 1 c. finely chopped parsley

Directions

    Combine liver spread, chopped pickle, mustard and margarine. Trim crust from bread.

    Cut into 9 long slices; spread with oleo and 2 tablespoons mixture.

    Place gherkin strip across narrow end of each slice and roll up like jelly roll.

    Wrap tightly in damp linen towel.

    Chill 2 hours.

    Slice each strip into 8 pieces.
