Loaded Cauliflower

  • 1 large head Cauliflower
  • 8 strips bacon
  • 6 tbsp chopped chives
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 cup colby jack shredded cheese or cheddar
  • 8 oz container sliced mushroims(optional)

Directions

    Preheat oven to 400F after bacon is cooked then to 425F.

    Cook bacon in oven for 20 min.

    In large pot boil water and cook cauliflower for 8-10 min., drain and let cool.

    In LG bowl combine sour cream, mayonnaise, 1/2 crumbled bacon, 3 Tbs chives, 1 cup of cheese and cauliflower.

    Mix well.

    Place in baking dish.

    Cover with remaining cheese and rest of crumbled bacon.

    Bake for 15-20 min.

    Top with remaining chives and serve.
