- 5 lb. potatoes, peeled and cubed
- 3/4 c. sour cream
- 1/2 c. milk
- 3 Tbsp. butter or margarine
- salt and pepper to taste
- 3 c. shredded cheddar cheese, divided
- 1/2 lb. bacon, cooked and crumbled
- 3 green onions, sliced
Directions

1Place potatoes in pot, cover with water, boil until tender. Drain and place in mixing bowl.

2Add sour cream, milk, butter salt and pepper.

3Beat until light and fluffy.

4Stir in 2 c. cheese, bacon and onions.

5Put in greased 3 qt. baking dish.

6Top with remaining cheese.

7Bake uncovered at 350 degrees for 30 minutes or until heated through and cheese is melted.
