Loaded Mashed Potatoes

Ingredients

  • 5 lb. potatoes, peeled and cubed
  • 3/4 c. sour cream
  • 1/2 c. milk
  • 3 Tbsp. butter or margarine
  • salt and pepper to taste
  • 3 c. shredded cheddar cheese, divided
  • 1/2 lb. bacon, cooked and crumbled
  • 3 green onions, sliced

Directions

    Place potatoes in pot, cover with water, boil until tender. Drain and place in mixing bowl.

    Add sour cream, milk, butter salt and pepper.

    Beat until light and fluffy.

    Stir in 2 c. cheese, bacon and onions.

    Put in greased 3 qt. baking dish.

    Top with remaining cheese.

    Bake uncovered at 350 degrees for 30 minutes or until heated through and cheese is melted.
