- 5 lb. potatoes, peeled and cubed
- 3/4 c. sour cream
- 1/2 c. milk
- 3 Tbsp. butter or margarine
- salt and pepper to taste
- 3 c. (12 oz.) shredded Cheddar cheese blend, divided
- 1/2 lb. sliced bacon, cooked and crumbled
- 3 green onions, sliced
Directions

1Cook potatoes until tender.

2Drain and place in mixing bowl. Add sour cream, milk, butter, salt and pepper.

3Beat on medium-low speed until light and fluffy.

4Stir in 2 cups cheese, bacon and onions.

5Transfer to a greased 3-quart baking dish.
