Loaded Potato & Broccoli Bake

- 8 medium new potatoes, cut into 1-inch cubes
- 1 head fresh broccoli, cut into florets
- 4 scallions, diced
- 1 cup sour cream
- 12 teaspoon Dijon mustard
- salt and pepper
- 4 slices cooked bacon, chopped (optional)
- 1 (8 ounce) packageshredded sharp cheddar cheese
Directions

1Preheat oven to 325EsF.

2Bring a large pot of water to a boil.

3Add potatoes, cook 2 minutes, add broccoli and cook additional two minutes; drain all well, pat dry.

4In a small bowl, combine scallions, sour cream, Dijon mustard, salt and pepper.

5Set aside.

6Coat a 9x9 square glass baking dish with cooking spray.

7Create layers as follows: 1/2 broccoli and potatoes, sour cream mixture, sprinkle with bacon, 1/2 cheddar cheese, remaining broccoli and potatoes, remaining cheese.

8Bake for 20 minutes, covered with tin foil.

9Bake an additional 10 minutes uncovered until cheese has melted completely and is bubbling.

10Allow to cool 5-10 minutes before serving.
