  • 1 tbsp oil
  • 1 1/2 cup zuccini cut in squares
  • 1/2 diced onion
  • 1/2 green bell pepper diced
  • 1 can rotell with liquid
  • 1 can black beans
  • 1/2 can corn
  • 3/4 cup water
  • 1 pinch ground cumin
  • 1 cup minute rice
  • to taste salt and pepper

Directions

    Heat oil in skillet, add zucchini bell pepper and onion cook for 5 minutes then add remaining ingridients except rice and cheese.

    Let come to a boil and add the rice.

    Stir and cover for 7 minutes or until liquid is absorbed and top with cheese.
