- 2 c. cooked, chopped lobster meat
- 2 c. cold water
- 4 Tbsp. soft butter
- 3 Tbsp. unbleached all-purpose flour
- 4 c. low-fat milk
- salt and pepper to taste
- dash of cayenne pepper
Directions

1This soup is not suitable for freezing.

2In large pot, combine lobster meat and cold water.

3Simmer, covered, for 15 minutes.

4In large saucepan, melt butter and blend in the flour.

5Gradually add the milk and cook until thickened, stirring frequently.

6Add the milk mixture to the lobster mixture.

7Stir well and reheat.

8Add salt and pepper and cayenne pepper to taste and serve.

9Yields 1 1/2 quarts.
