  • 2 c. milk
  • 1 c. light cream
  • 1 slice onion
  • 1 stalk celery, sliced
  • 2 sprigs parsley
  • 1 small bay leaf
  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. paprika
  • 1/8 tsp. white pepper
  • 1 (5 oz.) can lobster or meat from small boiled lobster or quick frozen lobster tails

Directions

    Scald milk and cream with onion, celery, parsley and bay leaf. Strain.

    Melt butter in 1 1/2-quart saucepan.

    Stir in flour, gradually, until smooth.

    Add scalded milk, slowly, stirring.

    Add salt, paprika, pepper and flaked, drained lobster meat.

    Stir and cook over low heat until thickened.
