- 2 c. milk
- 1 c. light cream
- 1 slice onion
- 1 stalk celery, sliced
- 2 sprigs parsley
- 1 small bay leaf
- 3 Tbsp. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. paprika
- 1/8 tsp. white pepper
- 1 (5 oz.) can lobster or meat from small boiled lobster or quick frozen lobster tails
Directions

1Scald milk and cream with onion, celery, parsley and bay leaf. Strain.

2Melt butter in 1 1/2-quart saucepan.

3Stir in flour, gradually, until smooth.

4Add scalded milk, slowly, stirring.

5Add salt, paprika, pepper and flaked, drained lobster meat.

6Stir and cook over low heat until thickened.

7Makes 4 servings.
