- 2 1/2 c. chicken stock
- 1 onion, sliced
- 4 stalks celery, sliced
- 2 cloves
- 1 bay leaf
- 6 peppercorns
- 1/4 c. butter
- 1/4 c. flour
- 3 c. milk
- 2 c. chopped, cooked lobster
- 1 c. hot cream
Directions

1Combine chicken stock, onion, celery, cloves, bay leaf and peppercorns in saucepan.

2Simmer for 30 minutes.

3Strain, reserving stock.

4Melt butter in saucepan.

5Blend in flour.

6Add milk gradually.

7Cook until thickened, stirring constantly.

8Stir in lobster and reserved stock.

9Simmer for 5 minutes.

10Stir in hot cream at serving time.

11Do not boil.

12Garnish with paprika. Serves 6.
