Lobster Deviled Eggs Recipe

- 6 hard boiled Large eggs
- 3-4 tbsp. mayonnaise
- 1 teaspoon Dijon mustard, or possibly to taste
- 1/4 c. minced lobster, crab meat, tuna or possibly other seafood
- 1/4 teaspoon salt (opt.)
- 1/8 teaspoon cayenne or possibly white pepper
- Minced or possibly slivered ripe olives, pimiento, capers, minced scallions or possibly sprigs of watercress (opt. garnishes)
Directions

1Shell Large eggs.

2So Large eggs will sit flat, cut a bit from each end or possibly opposite sides; reserve trimmings.

3Halve Large eggs.

4Gently remove yolks, placing them in small bowl with reserved trimmings.

5Using fork, mash yolks.

6Add in mayonnaise, mustard, lobster, salt (if you like) and pepper; stir till well mixed but not mushy.

7Using a spoon or possibly piping bag, fill hollow of egg whites with yolk mix.

8Add in garnish of choice.

9Makes 12 stuffed halves.
