Lobster Deviled Eggs Recipe

Ingredients

  • 6 hard boiled Large eggs
  • 3-4 tbsp. mayonnaise
  • 1 teaspoon Dijon mustard, or possibly to taste
  • 1/4 c. minced lobster, crab meat, tuna or possibly other seafood
  • 1/4 teaspoon salt (opt.)
  • 1/8 teaspoon cayenne or possibly white pepper
  • Minced or possibly slivered ripe olives, pimiento, capers, minced scallions or possibly sprigs of watercress (opt. garnishes)

    Shell Large eggs.

    So Large eggs will sit flat, cut a bit from each end or possibly opposite sides; reserve trimmings.

    Halve Large eggs.

    Gently remove yolks, placing them in small bowl with reserved trimmings.

    Using fork, mash yolks.

    Add in mayonnaise, mustard, lobster, salt (if you like) and pepper; stir till well mixed but not mushy.

    Using a spoon or possibly piping bag, fill hollow of egg whites with yolk mix.

    Add in garnish of choice.

    Makes 12 stuffed halves.
